Irene: Which city in China are you and your family from? 

Amanda: Our family is from Guangdong, but my ancestral home is Hubei. 

  

Irene: When did you come to America? How long have you been in Chinatown?    

Amanda: I came to the United States in 2007 and have been here for about 16 years. 

  

Irene: Why did you choose to open your restaurant in Chinatown?    

Amanda: Since I have worked in the catering industry for a long time, cooking is also my interest. 

 

Irene: Can you tell us about your restaurant? 

Amanda: Our restaurants serve Cantonese food, such as Fried Rice and Noodles, and the main dish is Hong Kong-style Wonton Noodles. 

  

Irene: How long has this restaurant been open? 

Amanda: I took over for about 4 years, but the restaurant "Hon" has been open for about 50 years. 

  

Irene: Why did you choose to open two restaurants in Chinatown? 

Amanda: Since our restaurant is not a high-end restaurant, I think my pricing is not very expensive, and everyone needs to eat.   My new restaurant also has many new elements. My old restaurant could only serve wonton noodles and beef brisket noodles. My new restaurant has more space, so I added many new meals such as fried noodles, fried rice, Xiaolongbao, pan-fried buns, and northern dumplings.  I think this can better meet different customers' needs. 

Irene: I see "Hon's Wonton" works well; can you share the secret of success? 

Amanda: In fact, there are no secrets to success. I think that in a restaurant, you must serve good food to customers, and then you must work hard and need to do and follow everything yourself. 

  

Irene: As a restaurant, what do you value most? 

Amanda: Of course, hygiene and food must be fresh. When you meet these two points, there will be more and more customers coming to your restaurant. 

  

Irene: What do you hope to see for the future of Chinatown?    

Amanda: To be honest, after the epidemic started, business in Chinatown dropped. Now that the Central Subway starts working, the tourism industry will improve and cause tourists to come to Chinatown. I hope to see Chinatown as lively and prosperous as before.
